These tests were studied when benzoate was added after manufacturing and after two periods of storage (four month and six month) on three temperatures: 4-7C◦ (refrigerator), 25-30C◦ (room) and 40C◦ (incubator). microbial content for drinks samples also were studied without benzoate after manufacturing directly and after six month at three conditions of storage mentioned above. microbial content involved: total plate count, coliform count, yeasts and molds, there was no colony formation for all microbes after drinks preparation in samples containing and non-containing benzoate while formation of microbial colonies was occurred for all microbes except the coliform bacteria during the three conditions of storage. Results also included the influence of the produced drinks on inhibition of bacteria: (Pseudomonas aeruginosa, Staphylococcus aureus and Escherichia coli) by using well diffusion method. the highest diameter rate of inhibition halos was for the cinnamon drink against Ps.aeroginosa bacteria amounted to 11.0 mm, E. coli showed higher sensitivity toward roselle drink, its inhibition halo diameter amounted to 11.1mm, while fenugreek drink didn't show any inhibition activity, or it wasn't clear against of the tested bacteria. Diagnosis of chemical compounds in the produced drinks by GC-MS technique revealed that they consist important compounds such as: volatile oils, terpenes , alkaloids, phenols, organic acid and others.

تضمنت الدراسة إنتاج مشروبات وظيفية من الخلاصات المائية لبعض الأعشاب الطبية وهي الزنجبيل والقرفة والحلبة والكجرات ومن ثم إجراء الاختبارات الميكروبية لها، إذ أُجريت فحوصات المحتوى الميكروبي للنماذج المدروسة بإضافة المواد الحافظة (البنزوات) بعد التصنيع وبعد الحفظ لمدتي (أربعة وستة أشهر) وبثلاثة ظروف خزنية هي: الثلاجة 4-7 مْ والغرفة 25-30 مْ والحاضنة 40 مْ ، وكذلك دراسة المحتوى الميكروبي للنماذج دون إضافة البنزوات وذلك بعد التصنيع مباشرةً ولمدة ستة أشهر وبظروف الحفظ الثلاثة المذكورة أعلاه، وقد شملت فحوصات المحتوى الميكروبي: دراسة العدد الكلي للبكتريا Plate Count Total والعدد الكلي لبكتريا القولون Coliform والخمائر Yeasts والاعفان Molds ، إذ لم يلاحظ تكوين أي مستعمرة بعد التصنيع لجميع هذه الميكروبات في النماذج المحتوية أو التي لا تحتوي المواد الحافظة في حين حصل تكوين مستعمرات لجميع الأحياء المجهرية عدا بكتريا القولون خلال ظروف الحفظ الثلاثة، وكذلك تضمنت هذه الدراسة نتائج تأثير المشروبات المنتجة في تثبيط البكتريا قيد الاختبار وهي Escherichia coli وaureus Staphylococcus و aeruginosa Pseudomonas باستخدام طريقة الانتشار في الحفر وكان أعلى معدل لقطر هالة التثبيط لمشروب القرفة ضد بكتريا Ps.aeroginosa إذ بلغ 11.0 ملم، وأظهرت بكتريا E. coli أعلى حساسية تجاه مشروب الكجرات إذ بلغ قطر هالة التثبيط 11.1 ملم مقارنةً مع بقية الأنواع الأخرى من البكتريا، في حين لم يظهر مشروب الحلبة فعالية تثبيطية أو كانت غير واضحة ضد بكتريا الاختبار، كما تضمنت هذه الدراسة تشخيص العديد من المركبات الكيميائية العضوية بتقنية GC-MS لمكونات المشروبات المنتجة ووجد أنها تحتوي على مركبات مهمة مثل بعض مركبات الزيوت الطيارة وبعض المركبات التربينية والقلويدية والفينولات والأحماض العضوية وغيرها.
