Al- Fadhly يحيى عاشور صالح صباح مالك حبيب الشطي نوال خالد زبين الفضلي PY - 2011 VL - 37 IS - 2B SP - 89 EP - 103 JO - Journal of Basrah Researches (Sciences) مجلة ابحاث البصرة ( العلميات) SN - 18172695 2411524X AB - This study was conducted to isolate and identify the molds and yeasts associated with Thelah fish Scomberoides commersonianus (Forskal,1775) which dried in laboratory using solar dryer and compared with sun dried fish which obtained from the local market in Basrah during 6 months storage periods at laboratory temperature (25±2)˚C from Jan.2007 to May 2008. The effects of temperature and pH on the molds were also studied. The following finding were obtained : Nine species of molds were isolated from dried Thelah fish, eight of them related to the genus Aspergillus except one species which related to the genus Penicillium .There were significant differences at (P>0.05) for means logarithmic numbers of molds in dried Thelah fish . A.niger had given the highest mean for logarithmic numbers of molds. Three types of yeasts were isolated and identified as: Candida albicans , C. catenuiata and Rhodotorulla sp. The first one gave the highest mean. From the other hand the number of molds and yeasts in the samples directly dried by sun light were found to be more than the solar dryer samples within the progress of storage periods up to 6 months. The study also showed that the means of radial growth of molds increased with increasing of temperature degrees up to 35 ˚C , while they decreased with increasing of pH values up to 4.5. The statically analysis results revealed significant differences (P>0.05) among the means of molds radial growth at all tested temperature degrees and pH values.

أجريت هذه الدراسة لعزل وتشخيص الأعفان والخمائر المصاحبة لأسماك الضلعة Forskal,1775)) Scomberoides commersonianus المجففة مختبريا بأستخدام المجفف الشمسي ومقارنتها مع العينات المجففة تحت أشعة الشمس مباشرة وذلك من خلال خزنها لمدة ستة أشهر عند درجة حرارة المختبر ( 25±2 ) º م للفترة من كانون الأول 2007 الى مايس 2008 ، كما درس تأثير درجة الحرارة والدالة الحامضية في نمو الأعفان ، وقد أسفرت الدراسة عـن النتائج التالية : تم عزل وتشخيص تسعة أنواع من الاعفان من اسماك الضلعة المجففة تعود ثمانية منها الى الجنس Aspergillus ونوع واحد يعود إلى الجنس Penicillium ، وقد اظهر التحليل الاحصائي وجود فروق معنوية (P<0.05) في متوسطات لـوغـاريتم أعـداد الأعفان فـي أسـماك الـضلعة المجفـفة إذ حقق العفن A.niger أعلى متوسط للوغاريتم أعـداد الأعفان ، وتـم أيضا عـزل وتشـــخيص ثـلاثة أنـواع مـن الخمائر وهي Candida albicans و C. catenuiata و Rhodotorulla sp. وقد حققت الخميرة الأولى أعلى متوسط ، ولوحظ أزدياد أعداد الاعفان والخمائر في العينات المجففة تحت أشعة الشمس مباشرة مقارنة مع العينات المجففة بالمجفف الشمسي مع تقدم مدة الخزن لغاية 6 أشهر. وأظهرت النتائج حصول زيادة في متوسط أقطار الأعفان بأرتفاع درجة حرارة الحضن لغاية 35 º م ، بينما لوحظ أنخفاض متوسط أقطار الأعفان بزيادة قيمة الدالة الحامضية للوسط الزرعي لغاية 4.5, كما أظهرت نتائج التحليل الاحصائي وجود فروق معنوية (P<0.05) في متوسط أقطار الأعفان المدروسة في جميع درجات الحرارة وقيم الدالة الحامضية المختبرة للعفن نفسه.
