Effect of physical adsorption method on physical and chemical properties of immobilized pepsin compared with free pepsin

Abstract

Physical adsorption method was used to immobilized pepsin enzyme using sodium alginateballs as enzyme carriers .The value of Km was 0.51,0.61 for the free and immobilized enzymerespectively. Vmax value was 104 and 71 for free and immobilized enzyme respectively. Thehighest enzyme activity was 40 and 55 C0 for free and immobilized enzyme respectively and2.5 and 3.5 was the optimum pH within the pH range for free and immobilized enzyme, respectively.The stability of the immobilized enzyme was higher than the free enzyme.
